Ingredients:
200 ml water
75 g quinoa (to make 1 cup)
200 g cooked Australian tiger prawns, peeled and deveined
2 mangos, peeled and cut into cubes
200 g baby spinach, washed and roughly torn
1 cucumber, sliced
4 radishes, sliced
For the dressing
190 g natural Greek yoghurt
½ cup mint leaves, chopped
1 tablespoon lemon juice
½ garlic clove, diced finely
sea salt and freshly ground black pepper to taste
Prawns and mango go together like strawberries and cream, only they’re a lot better for you. The dressing is similar to a tzatziki, but if you can’t eat dairy, a simple mix of olive oil, balsamic vinegar and lemon juice also works really well.
Bring the water to the boil in a saucepan, add the quinoa, cover with a lid and simmer for 15 minutes, fluffing up the grains halfway through cooking with a fork for extra volume, until the grains are tender and the water has been absorbed. Set aside to cool.
In a large bowl, place the prawns, mango, spinach, cucumber, radish and quinoa.
To make the dressing, place all the ingredients in a bowl and stir gently until well combined. Add to the other ingredients and toss gently to combine.
