150g frozen peas
40ml cream
40g unsalted butter
1 Pinch salt flakes
1 baguette, sliced
1-2 garlic cloves
Hot grill pan with extra virgin olive oil as needed
80g blue cheese or brie or more as needed
Fresh thyme sprigs

Place all ingredients into a small saucepan and cook for a few minutes until the cream is just hot and the peas are bright green. Use a stick blender to puree until smooth.

Serve on grilled toast, that you have rubbed with a garlic clove prior to toasting. Top with soft cheese of choice and thyme sprigs.

We suggest a soft blue or a brie both work really well with the sweetness of the peas.
