These delicious Lamington pikelets are the perfect treat for breakfast, lunch or dessert. Just 4 basic ingredients and you are sorted.
All you really need for this recipe is a pack of pre-made pikelets, some icing which you can also grab pre-made at the supermarket, cream and coconut.
But if you prefer to make your pikelets from scratch feel free to use a basic pikelet recipe and follow the icing directions below.
Ingredients
- 4 cups desiccated coconut
- Icing
- 2 x 200g packet pre-made pikelets (8 in each)
- 300ml tub thickened cream, whipped, to serve
Icing mixture
- 4 cups icing sugar mixture
- 1/2 cup cocoa powder
- 50g unsalted butter, chopped
- 3/4 cup milk
To make icing, place sugar in a large heatproof bowl. Sift cocoa over the top. Stir to combine. Add butter and milk. Sit bowl over a medium saucepan of simmering water. Gently whisk until butter is melted and mixture is smooth. Stand for 10 minutes.
Assemble Lamington pikelets
Dip pikelets into icing mixture, allowing excess to drip off. Coat both sides in coconut and place on a wire rack to set.
To serve, sandwich 2-3 pikelets together with whipped cream and drizzle with jam or a berry sauce.
