This delicious one pan recipe will have the whole family begging for more. With just five main ingredients you will have dinner on the table in under one hour.

INGREDIENTS

  • 1.5 tablespoons coconut oil (extra virgin) melted
  • 4 chicken drumstick(s)
  • 400 grams potato(es) washed and cut in half
  • 2 onion (red) roughly chopped
  • 1 tablespoon oregano
  • 1 lemon(s) zested and juiced
  • salt & pepper to taste
  • 4 cups mixed salad to serve

METHOD

  1. Preheat a fan-forced oven to 200°C/400°F/Gas Mark 6.
  2. Put the oil in the bottom of a large roasting dish. Rub the skin of the chicken in the oil and season with salt then, lay the drumsticks in the dish.
  3. Place potatoes around the edges of the chicken. Scatter the onion, lemon juice, zest, and oregano over the top. Place roasting dish in the oven and bake chicken for 40-45 minutes, turning halfway (or until chicken is golden and juice runs clear when pierced).
  4. When cooked divide the chicken drumsticks and roast veggies between four plates. Serve with mixed salad leaves.
