This brownie slice is a simple mix and bake recipe. Delicious and perfect for ready to go snack, lunchboxes and pre/post training nourishment. 

Makes approx. 20 bars

Ingredients

2 ½ cups roast sweet potato flesh, cooled

1/3 cup peanut butter or any nut butter or tahini

1/3 cup maple syrup or honey

½ cup shredded coconut

½ cup raw cacao powder

2 cup oats, brown rice flakes or quinoa flakes

¾ packet Aussie Sprouts Crunchy Combo 

Method

Preheat an oven to 180C. Grease and line a baking dish with baking paper. 

Place the sweet potato into a mixing bowl and mash with a fork. 

Add the remaining ingredients and mix well to combined, then press into the baking dish, approx. 2.5cm high. If the baking dish is too big, press it against one side of the dish to make a neat shape.

Bake for 25-30 minutes then allow to cool completely before cutting into bars. 

Store in the fridge.
