Shan & Jess met through their kids’ local primary school a few years ago and quickly bonded over their obsession for highland cows, red wine, Seinfeld and delicious food. Not a day would go by where they weren’t discussing recipes or the latest foodie podcast they were devouring, even now.
As busy working mums, it’s often hard to find the time, the energy or the creativity needed to put interesting, nourishing meals on the table. These girls are passionate about evoking joy at meals times & creating connection within our community through healthy, nutritious plant-based food – without the hassle & without the wastage!

Ingredients
1 tbsp. olive oil
1 brown onion, finely diced
1 red capsicum, finely chopped
2 garlic cloves, crushed
1 in. cube ginger, skin off, grated
1/2 tbsp. curry powder
1/2 tsp. cumin
1 cup pumpkin, cubed
1 1/2 tbsp. red curry paste
1 400ml can coconut milk
3 cups boiling water
1 veggie stock cube, crumbled
1/2 tbsp. tamari (or soy sauce)
1 heaped tbsp. nutritional yeast
350g pack of tofu, cubed
Chilli flakes to taste
200g vermicelli rice noodles
To garnish: Fresh coriander, lime wedges, red onion and chilli
Method
In a large soup pot, heat a splash of oil then add your brown onion. Sweat for 5 minutes and stir often to avoid burning.
Now add your capsicum and soften for 1 – 2 minutes before adding your garlic, ginger, curry powder and cumin. Cook for a few more minutes until fragrant.
Add the pumpkin with a big splash of water and put the lid on for 5 minutes until the pumpkin starts to soften.
Remove lid, increase to high heat, add curry paste, seasoning to taste, coconut milk, water, crumbled veggie stock cube, tamari, tofu and chilli flakes (if using).
Stir until combined and slowly bring to a boil.
Once bubbling, add your noodles and reduce heat. Cook for another 5 minutes.
Serve soup hot, topped with freshly chopped coriander, chilli, red onion and lime wedges to taste.
