Is it just me or does everything taste better with goats cheese? And mint and watermelon… If this salad doesn’t simply scream “Summer” then I don’t know what does! Presenting The Leaf Store’s Watermelon and radish salad with goats cheese.


500g chilled watermelon
150g soft goats cheese
4 red radishes
2 shallots
1 cup mint
1 cup basil

1/3 cup verjuice
2 ½ tbsp extra virgin olive oil


Thinly slice and cut watermelon into rough triangles.

Arrange watermelon on a platter and dot with small spoonful’s of goats cheese.

Thinly shave radishes and shallots on a mandolin or carefully with a knife and scatter over the watermelon.

Roughly chop herbs and sprinkle over the watermelon.

For the dressing, whisk ingredients in a bowl, season to taste, then drizzle over watermelon salad and serve.
