Your favourite family recipe just got even better! Gluten free mac n cheese with potato crisps…

Prep time: 10 minutes |Cook time: 15 minutes |3-4 servings

Ingredients

  • 225g gluten free elbow macaroni
  • 1 ½ tablespoons olive oil
  • 1 ½ tablespoons gluten free flour (sweet rice flour)
  • 1 cup Nutpods creamer
  • ½ cup extra sharp cheddar cheese, shredded
  • ½ cup parmesan cheese, shredded
  • ¼ cup nutritional yeast
  • 1 tsp kosher salt
  • ¼ tsp onion powder (optional)
  • ¼ tsp garlic powder (optional)
  • ⅛ tsp cayenne pepper (optional)
  • 20 The Good Crisp Company Original Crisps (available at Coles)
  • 2 tsp olive oil

Method

  1. Cook the elbow macaroni according to package instructions until slightly less than al dente (~1-1.5 minutes less). Drain and set aside when cooked.
  2. In a 10” saute pan, heat up olive oil over medium heat. Once olive oil is heated, add gluten free flour and stir with a rubber or silicone spatula until the flour darkens slightly to make a roux, about 4-6 minutes.
  3. Once the roux is finished, pour Nutpods Vegan cream into roux and stir to combine. Allow the cream to come to a simmer, then add both cheeses, nutritional yeast, kosher salt, onion powder, garlic powder and cayenne pepper (if using). Stir gently until the cheeses melt and create a smooth cheese sauce.
  4. Add cooked macaroni to cheese sauce and toss/stir to completely coat the macaroni.
  5. Place The Good Crisp Company Original Potato Crisps in the food processor until you have small crumbs.
  6. Add 2 tsp olive oil to a non stick or cast iron pan and bring to medium heat. Add potato crisps crumb and cook for 4-5 minutes over medium heat, or until browned and toasted.
  7. Top finished mac & cheese with The Good Crisp Company bread crumb topping and enjoy!

Recipe Notes

  • Not all gluten free flours are created equal – if you have access to it, try to get sweet rice flour for the best texture out of your roux
  • If all you have on hand is another gluten free flour, use it! Just know the texture might be slightly gritty while the flavor will still be great
