We have a delicious banana bread recipe thanks to McKenzie’s Foods and it’s even gluten free for those who can’t have gluten.
Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 1 loaf
Ingredients:
● 1 cup McKenzie’s Brown Rice Flour
● 3⁄4 cup McKenzie’s Almond Flour
● 1⁄4 cup McKenzie’s Tapioca Flour
● 2 tsp McKenzie’s Baking Powder
● 1 tsp mixed spice
● 1⁄2 cup sunflower oil
● 1/3 cup raw sugar
● 2 extra large eggs
● 2 tbs almond or soy milk
● 1 tsp vanilla extract
● 2 small ripe bananas, mashed
Method:
- Preheat the oven to 180°C (160°C fan-forced). Grease and line the base and sides of a 10 x 20cm loaf pan.
- Combine the flours, baking powder and mixed spice in a large mixing bowl.
- In a separate bowl whisk together the oil, sugar, eggs, milk and vanilla. Mix in the banana. Add to the bowl of dry ingredients and mix until just combined. Pour into the prepared pan and bake for 40 minutes until golden and an inserted skewer comes out clean.
