Former blockhead El’ise Bothe from @eliseandmatt has been whisked back into her childhood on a recent family beach caravan trip, and has shared the nostalgic vibes with her children by recreating her Nana’s famous loaded brownies recipe (with a twist!)

These chocolatey squares of goodness have stuck with El’ise throughout her life, bringing that warm, fuzzy feeling every time she takes a bite. 

This much-loved family recipe uses Australian pantry staples, White Wings Plain Flour and CSR Brown Sugar, with El’ise spicing it up by adding another layer of chocolaty goodness, using White Wings Chocolate Mousse Mix and CSR Muscovado Sugar, AND cooking in an airfryer!

Loaded Brownies in the Airfryer

Brownies
Prep time: 10 min | Cooking time: 30 min

Topping
Prep: 5 min | Refrigerator time: 60 min

Ingredients

  • 200 grams of salted cooking butter
  • 1/2 cup of cocoa
  • 2 eggs
  • 1 teaspoon of vanilla essence
  • 1/2 cup decadent CSR Muscovado Sugar
  • 1 1/2 cups of CSR Brown Sugar
  • 1 cup of White Wings Plain Flour
  • Chopped walnuts – optional

Topping
310ml of ice cold mild
1 bag of White Wings Chocolate Mousse Mix

Method

  1. Preheat oven to 180 and grease a 30cm x 20cm tin
  2. Melt butter and cocoa over a low heat- don’t boil or burn
  3. Add sugar and vanilla, mix well
  4. Add eggs and beat well
  5. Add chopped walnuts
  6. Spread into tin, cook 20-25 min (if using the air fryer it should take the same temperature and time)
  7. Let brownies cool before adding mousse, if not serve and enjoy straight away!
