Dagmara from @littlekalegirl, traded in her signature smoothie bowl for a Purple Cauliflower soup to keep her cosy this winter. Dagmara also uses her Vitamix A3500i, the ultimate blender for all your soups this winter.
Purple Cauliflower Soup
Ingredients
· 1 large head purple cauliflower
· 2 leaks (white part only)
· 1 potato
· 1 garlic bulb
· 1 teaspoon paprika powder
· 1 teaspoon Italian seasoning
· 1 teaspoon Himalayan salt
· 4 cups vegetable stock
· 4 tablespoons extra virgin olive oil
· Small pieces of thymes
· For garnish: ½ cup yoghurt, micro greens, edible flowers
Method
1. Pre-heat oven at 180 C
2. Place cauliflower cut into bite size florets and garlic bulb onto baking tray or dish and toss it with 3 tablespoons of extra virgin olive oil. Sprinkle paprika powder, salt, seasoning and add thyme.
3. Roast in the oven for 30 minutes.
4. Boil 1 large potato.
5. While cauliflower is roasting in a pan fry on a low heat sliced leaks sprinkled with salt and crashed 3 garlic cloves. Fry each side for 3-4 minutes.
6. Add into your Vitamix Ascent jug: vegetable stock, roasted cauliflower, garlic, leak and potato.
7. Using the Vitamix A2500i or A3500i, select the “soup” program setting and blend.
8. Garnish bowl of soup with small purple cauliflower pieces, yoghurt, extra virgin olive oil, edible flowers and micro greens.
9. Add salt and pepper if required.
