These spiced nuts make great take home table decorations; simply buy small clip-lock jars and fill with a serve of the nuts; tie a Christmas ribbon on each one.

Serves: 10

Ingredients:

1 cup almonds
1 cup cashews
½ cup pecans
½ cup pistachios
½ cup pumpkin seeds
½ cup chia seeds

Spice mix:

50g grass-fed unsalted butter
4 tablespoons organic rice malt syrup
1 tablespoon cinnamon
½ teaspoon nutmeg
½ teaspoon mixed spice
1 teaspoon sea salt

Method:

Preheat oven to 180°C and line a baking tray with baking paper.

In a large bowl, mix together the almonds, cashews, pecans, pistachios, pumpkin and chia seeds.

Heat a saucepan over a low heat and add the ingredients for the spice mix. Cook, stirring regularly, for 2-3 minutes or until the butter has melted and all ingredients have combined.

Pour the spice mixture over the nuts and seeds and stir together, ensure the nuts, seeds and spice mix are well combined and coated.

Spread the spiced nuts evenly onto the lined baking tray and bake for 20 minutes or until golden. Ensure you keep
a close eye on the mixture as it can quickly go from golden to burned!

Allow the mixture to cool completely before storing in an airtight container in the fridge until ready to serve.
