In just 30 minutes this delicious Lasagne in a mug can be ready to serve the family for dinner and then you can relax on the couch while enjoying yours in front of the TV. 

Serves 6


  • 4 fresh lasagne pasta sheets
  • 500g mince (leave mince out if you prefer vegetarian)
  • 1 clove garlic
  • 1/2 brown onion
  • 1 tsp Italian herbs 
  • 250g baby spinach
  • 1  zucchini, grated
  • 1 carrot, grated
  • 500g fresh firm ricotta
  • 1 egg, beaten
  • 1/2 cup grated parmesan
  • 500g bottle passata
  • 3 cups grated mozzarella


  • Cut each pasta sheet in 6. Place in a dish and cover with boiling water. Set aside to soften then drain.
  • In the mean time brown mince, add garlic and onion and cook until softened. Stir through herbs and passata sauce.  Allow to cook for 10-15mins. (this can even be pre-cooked the night before to make the prep easier!)
  • Place spinach in a bowl and cover with boiling water until wilted then drain and rinse under cold water. Squeeze out excess water.
  • Squeeze liquid from zucchini then combine the spinach, zucchini, carrot, ricotta, egg and 1 ⁄ 3 cup parmesan in a large bowl.
  • Lightly spray 6x microwave safe mugs or ramekins with oil.
  • Place 1 tbs of the mince sauce in each mug then a pasta square and 2 tbs of ricotta mixture. Top with 1 tbs mozzarella and 1 tbs meat sauce. Repeat layering. Finish off with pasta then remaining parmesan and mozzarella.
  • Cover each mug with plastic wrap and microwave on high for 2 minutes. Uncover and microwave for a further minute or until cheese is bubbling. Leave for a minute to cool.  Enjoy!
