This three ingredient Christmas cake will have you pleasantly surprised when you bite into a delicious slice with a hot cuppa on Christmas day.

INGREDIENTS

  • 1kg mixed dried fruit
  • 600ml iced coffee or Baileys Irish cream (you can use any liquid you like; apple juice, brandy, blackcurrant juice, choc milk… or a mixture)
  • 2 cups self-raising flour

METHOD

  • Preheat oven to 180C.
  • Tip the fruit into a large bowl and add the iced coffee (or your liquid of choice). Leave to soak over night.
  • Stir in the self-raising flour.
  • Pour the mixture into a greased cake tin and bake in a moderate oven for roughly an hour or until the cake springs back in the middle.

FOR THE SLOW COOKER:

Choose a spring-form cake tin that fits inside your slow cooker. Grease and line the tin with parchment. Pour in your batter (to ⅔ of the way full). Place your tin in the slow cooker and surround with hot water until it comes ⅔ of the way up the sides of the tin.

Wrap the lid of your slow cooker in a cloth (to absorb condensation and stop it dropping on top of the cake), fit the lid to the slow cooker and set on low for six hours.

Remove cake from slow cooker and allow to cool in the tin.
