This sneaky little twist on a classic stuffed potato recipe is simply divine.
Ingredients:
- 4 large sweet potatoes
- 2 cups cooked broccoli
- ½ cup plain Greek yogurt or sour cream
- Salt and pepper to taste
- ½ cup crushed Good Crisp Co Chips (available at Coles)
- Marshmallows, shredded cheddar cheese, shredded parmesan cheese, optional toppings and to taste.
Method:
- Preheat oven to 180c degrees.
- Cut sweet potatoes in half length-wise.
- Carefully scrape out the inside, leaving skin in one piece and setting aside for later. Place the inside of the sweet potato in a medium size mixing bowl.
- Chop broccoli and add to the mixing bowl.
- Add Greek yogurt or sour cream to the mixing bowl and mash ingredients together well.
- Add salt and pepper, to taste.
- Stuff sweet potato mixture back into the sweet potato skins.
- Spoon crushed Good Crisp Co chips over top of each potato half and press to make layer of crisps.
- Sprinkle marshmallows and cheese on top of stuffed potato.
- Place stuffed potato in oven for 15 minutes or until potato is warmed through and marshmallow and/or cheese is melted.
