This sneaky little twist on a classic stuffed potato recipe is simply divine.


  • 4 large sweet potatoes
  • 2 cups cooked broccoli
  • ½ cup plain Greek yogurt or sour cream
  • Salt and pepper to taste
  • ½ cup crushed Good Crisp Co Chips (available at Coles)
  • Marshmallows, shredded cheddar cheese, shredded parmesan cheese, optional toppings and to taste.


  1. Preheat oven to 180c degrees.
  2. Cut sweet potatoes in half length-wise.
  3. Carefully scrape out the inside, leaving skin in one piece and setting aside for later. Place the inside of the sweet potato in a medium size mixing bowl.
  4. Chop broccoli and add to the mixing bowl.
  5. Add Greek yogurt or sour cream to the mixing bowl and mash ingredients together well.
  6. Add salt and pepper, to taste.
  7. Stuff sweet potato mixture back into the sweet potato skins.
  8. Spoon crushed Good Crisp Co chips over top of each potato half and press to make layer of crisps.
  9. Sprinkle marshmallows and cheese on top of stuffed potato.
  10. Place stuffed potato in oven for 15 minutes or until potato is warmed through and marshmallow and/or cheese is melted.
