The rich espresso pancake paired with a sweet caramel topping is the perfect way to get your caffeine fix for Shrove Tuesday and beyond, and is a great option for anyone craving an espresso martini in the AM.

Ingredients

  • 125ml SodaStream sparkling water
  • 60ml espresso
  • 1 1/2 cups plain flour
  • 1 tbsp baking powder
  • 2 tbsp caster sugar
  • 1/2 tsp salt
  • 1 egg, lightly whisked
  • 1/2 cup milk
  • 2 tbsp unsalted butter, melted
  • Extra butter for frying pancakes

Caramel Sauce:

  • 200g caramel chips
  • 80ml thickened cream

Method:

  1. To prepare the SodaStream Sparkling Water: Fill a Sodastream 1 Litre Bottle with cold water and carbonate. 
  2. Brew 2 shots of espresso coffee using a coffee maker.
  3. Take a large mixing bowl and add in flour, baking powder, caster sugar, and salt. Mix well.
  4. Make a well in the center and add the egg, milk, sparkling water, cooled espresso and melted butter. 
  5. Whisk together until combined (a few lumps are okay) using a hand blender with whisk attachment.
  6. Heat a large non-stick frying pan over a medium heat. Grease the pan with butter. Add in 1/4 cup of the mixture into the pan for each pancake. Cook pancakes for 2 minutes or until bubbles appear on the surface, then turn and cook for a further 1-2 minutes or until cooked through. Set aside and keep warm under some aluminium foil

For the Caramel Sauce:

  1. Combine cream and caramel chips in a heatproof bowl. Microwave for 1-2 minutes until the mixture has melted and has come together.
  2. Drizzle pancakes with caramel sauce and enjoy
