The rich espresso pancake paired with a sweet caramel topping is the perfect way to get your caffeine fix for Shrove Tuesday and beyond, and is a great option for anyone craving an espresso martini in the AM.
Ingredients
- 125ml SodaStream sparkling water
- 60ml espresso
- 1 1/2 cups plain flour
- 1 tbsp baking powder
- 2 tbsp caster sugar
- 1/2 tsp salt
- 1 egg, lightly whisked
- 1/2 cup milk
- 2 tbsp unsalted butter, melted
- Extra butter for frying pancakes
Caramel Sauce:
- 200g caramel chips
- 80ml thickened cream
Method:
- To prepare the SodaStream Sparkling Water: Fill a Sodastream 1 Litre Bottle with cold water and carbonate.
- Brew 2 shots of espresso coffee using a coffee maker.
- Take a large mixing bowl and add in flour, baking powder, caster sugar, and salt. Mix well.
- Make a well in the center and add the egg, milk, sparkling water, cooled espresso and melted butter.
- Whisk together until combined (a few lumps are okay) using a hand blender with whisk attachment.
- Heat a large non-stick frying pan over a medium heat. Grease the pan with butter. Add in 1/4 cup of the mixture into the pan for each pancake. Cook pancakes for 2 minutes or until bubbles appear on the surface, then turn and cook for a further 1-2 minutes or until cooked through. Set aside and keep warm under some aluminium foil
For the Caramel Sauce:
- Combine cream and caramel chips in a heatproof bowl. Microwave for 1-2 minutes until the mixture has melted and has come together.
- Drizzle pancakes with caramel sauce and enjoy
