The best part about Winter is the tasty desserts and treats. Mmmm warm apple pie, a pear tart or a delicious warm pudding. We have shared just a few of our favourite sweet treats below.

Dutch baby with apples

Preparation and cooking time: 30 min
Serves 6

Ingredients

  • 3 tbsp. unsalted butter
  • 675g/1.5 lb sliced, peeled apples
  • 2 tbsp. firmly packed light brown sugar
  • 1/2 tsp. ground cinnamon
  • 4 large eggs, lightly beaten
  • 250ml/8.7 fl oz whole milk
  • 1 tsp. vanilla extract
  • 128g/4.5 lb all-purpose flour
  • 1/8 tsp. salt
  • Confectioners’ sugar for dusting

Method

  1. Position a rack in the lower third of the oven and preheat to 220°C/425°F/gas 7.
  2. In a large frying pan, melt 2 tablespoons of the butter over medium-high heat. Add the apples and brown sugar and cook, turning as needed, just until crisp-tender, about 4 minutes.
  3. Sprinkle with the cinnamon and stir to combine.
  4. Add the remaining tablespoon of butter and swirl the pan until the butter melts and coats the bottom and sides of the pan.
  5. In a bowl, whisk together the eggs, milk and vanilla. Sift the flour and salt over the mixture and whisk until blended.
    Carefully pour the batter over the hot fruit.
  6. Bake until puffed and golden brown, 20-25 minutes.
  7. Dust the top with confectioners’ sugar.

Pear tarte tatin

Preparation and cooking time: 50 min
Serves 4

Ingredients

  • 1 sheet puff pastry
  • 25g/0.9 oz superfine sugar
  • 50ml/1.7 fl oz water
  • 55g/2 oz unsalted butter (chopped)
  • 5 pears (peeled, cored and quartered)

Method

  1. Preheat oven to 190°C/375°F/gas 5.
  2. Place the sugar and water in a 24cm -round non-stick frying pan over low heat and cook, stirring, until the sugar is dissolved. Increase the heat to medium and bring to a boil.
  3. Cook, without stirring, for 7–9 minutes or until lightly golden. Carefully add the butter and stir until melted and well combined.
  4. Remove the pan from the heat and carefully arrange the pear, cutside up and slightly overlapping, in the caramel.
    Top the fruit with the pastry round and fold the edges under to tuck in the apples.
  5. Using a fork, make a few marks in the center of the pastry. Bake for 35–40 minutes or until the pastry is puffed and golden.
  6. Allow to stand for 2–3 minutes. Carefully turn out the tart to serve.

Bread and butter pudding

Preparation and cooking time: 70 min
Serves 6

Ingredients

  • 500g/1.1 lb bread (pulled apart)
  • 150g/5.2 oz sugar
  • 500g/1.1 lb raisins
  • 1l/35.2 fl oz milk
  • 75g/2.6 fl oz butter (plus extra for lining the tin)
  • 2 tsp mixed spice
  • 1 tsp vanilla extract

Method

  1. Preheat the oven to 180°C/350°F/Gas 4.
  2. In a large casserole, lightly heat the milk, butter, fruit and sugar. Mix in the teared apart bread slices, mixed spice and vanilla, stir well.
  3. Grease a roasting tin and fill with the mixture, spread well into all corners.
  4. Cover with a piece of foil so the raisins do not burn (remove this 10 minutes before end of cooking time).
  5. Bake for 45-55 minutes or until golden brown.

Blackberry baked Custard

Preparation and cooking time: 55 min
Serves 6

Ingredients

  • Unsalted butter for greasing
  • 450g/1 lb blackberries
  • 250ml/8.7 fl oz whole milk
  • 60ml/2 fl oz heavy cream
  • 68g/2.2 oz sifted cake flour
  • 4 large eggs, at room temperature
  • 100g/3.5 oz granulated sugar
  • 1/8 tsp. salt
  • 1/2 tsp. almond extract
  • Confectioners’ sugar for dusting

Method

  1. Position a rack in the upper third of the oven and preheat to 175°C/347°F/gas 4.
  2. Butter a small frying pan. Arrange the berries in the prepared pan.
  3. In a saucepan over medium-low heat, heat the milk and cream until small bubbles appear around the edges of the pan.
  4. Remove from the heat and vigorously whisk in the flour, a little at a time, until no lumps remain.
  5. In a bowl, whisk together the eggs, granulated sugar and salt until creamy. Whisk in the milk mixture and the almond extract.
  6. Place the pan on a baking sheet. Bake until browned, 45 minutes.
  7. Transfer to a rack to cool. Dust with confectioners’ sugar and serve warm.
